Safe temperatures for hard to hold foods

I am looking for a reference regarding the safe serving temperatrures for hard to hold  foods such as grilled cheese sandwiches, Reuben sandwiches, pancakes and French toast. The concern is that they do not always meet the standard of >140. The ground and pureed diets hold up well, it's just with the regular and chopped diets.
